  • 1 cup Arborio rice (for the risotto base)

  • 4 cups vegetable or chicken broth
  • 1 cup mixed mushrooms (shiitake, oyster, or enoki), sliced
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon soy sauce
  • 1 tablespoon mirin (Japanese sweet rice wine)
  • 1 avocado, sliced
  • 1 nori sheet, cut into thin strips
  • Sesame seeds for garnish
  • Fresh chives or green onions, chopped

Instructions:

  1. Prepare the Risotto Base:

    • Heat olive oil in a large pan over medium heat. Add the chopped onion and minced garlic. Sauté until translucent.
    • Add Arborio rice and stir for a minute until it’s well-coated with oil.
    • Pour in the white wine and let it simmer until mostly absorbed.
    • Gradually add the vegetable or chicken broth, one ladleful at a time, stirring continuously. Allow each addition to be absorbed before adding more. Cook until the rice is creamy and tender.

    • In a separate pot, cook the sushi rice according to package instructions. Once done, fluff it with a fork.
    • Mix the cooked sushi rice with soy sauce and mirin. Set aside.
  3. Combine Italian and Japanese Elements:

    • Fold the cooked sushi rice into the risotto base. The combination of creamy Arborio rice and sticky sushi rice creates a unique texture.
    • Add the sliced mushrooms and grated Parmesan cheese. Stir well to incorporate.
    • Adjust the seasoning with salt and pepper.
