Cauliflower Gravy

 Cauliflower Gravy Recipe

** Servings: 4-6**

Ingredients:
  • 1 head of cauliflower
  • 2 tablespoons butter or oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup all-purpose flour
  • 1 cup vegetable or chicken broth
  • 1/2 cup milk or cream
  • Salt and pepper, to taste
  • Optional: nutmeg, paprika, or other spices of your choice
Instructions:
  1. Rice the Cauliflower: Pulse the cauliflower in a food processor until it resembles rice.
  2. Sauté the Onion and Garlic: In a large saucepan, melt the butter or heat the oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute.
  3. Add the Cauliflower: Add the riced cauliflower to the saucepan and cook, stirring occasionally, until it's tender and lightly browned, about 5-7 minutes.
  4. Make the Roux: Sprinkle the flour over the cauliflower mixture and cook for 1-2 minutes, stirring constantly.
  5. Add the Broth and Milk: Gradually pour in the broth and milk, whisking continuously to avoid lumps. Bring the mixture to a simmer.
  6. Season and Spice: Add salt, pepper, and any desired spices (such as nutmeg or paprika). Adjust the seasoning to taste.
  7. Serve: Serve the cauliflower gravy hot over your favorite dishes, such as roasted meats, mashed potatoes, or as a vegetarian main course.
Tips and Variations:
  • For a creamier gravy, add more milk or cream.
  • To add extra flavor, sauté some mushrooms or herbs with the onion and garlic.
  • Experiment with different spices, such as cumin or coriander, for a unique flavor.

Enjoy your delicious cauliflower gravy!
